Summary

Metal House Cider is a small-batch farm cidery located in Esopus, New York. Matt DiFrancesco and Kimberly Kae are the co-owners of Metal House and are responsible for all aspects of production - from caring for the apple trees to the label art. All the fruit Matt and Kimberly pick and press is local to them, either from untreated, local abandoned orchards, or sustainably grown by them.

Matt and Kimberly spent a few years observing how the ciders made from their untreated orchard had a depth of character - despite being non-cider specific varieties - and they carry this minimal intervention lesson forward. They endeavor to create ciders which reflect the history and specific terroir of their spot in the Hudson Valley, and are now stewarding an historic Esopus orchard back to life with a combination of bio-intensive and biodynamic practices.

Metal House makes méthode champenoise ciders which are maintained en tirage for a minimum of 8 months and some for as long as three years.
