NOTES
VINEYARD: A single vineyard at 600 meters above sea level. Old vineyard with traditional goblet training. Poor, shallow soil with limestone surface layer.
FARMING: Sustainable
VINIFICATION: Hand-harvested on September 14th. Cold skin maceration for 36 hours followed by a light pressing. Racking, alcoholic fermentation, and aging on lees in 500-liter new French oak barrels, with batonnage for the first two months. Aged 11 months in barrel.
