NOTES
VINEYARD: Grapes are sourced from selected vineyards throughout Ontinyent, with varying soil types and orientations and a combined average age of 40 years old. All are in organic conversion.
FARMING: Organic
VINIFICATION: Cold maceration for 36 hours. Whole-cluster fe for 15 days in 50 hL stainless steel tanks, without temperature control and light pumping over for aeration. Aged 5 months in 5,000L concrete tanks. Light filtration at bottling. No stabilization treatments.
