NOTES
VINEYARD: From a single vineyard of 2.5 ha. Gabbro terroir (igneous rock similar to basalt) with 40cm of topsoil before hitting bedrock. Fifty-plus year old vines.
FARMING: Certified Organic
VINIFICATION: Gentle pressing with a pneumatic press. Static cold settling for 12 hours and fermentation in traditional glass-enameled underground tanks. Indigenous yeasts. Unfined, unfiltered. 18 months on fine lees, with stirring of the lees during the first weeks of aging.
