VINEYARD: Limestone soils on a plateau near Monthou-sur-Cher.
VINIFICATION: Spontaneous fermentation Semi-carbonic maceration with alternate layers of de-stemmed and whole-clustered grapes, in a wooden vat - the idea being that the grapes wouldn't be too harshly crushed by their own weight. No real remontage, just a bit of juice poured on the cap to re-humidify it. The maceration lasted 3 weeks.
