VINEYARD: Terroir plays an important role in this estate where three different soil structures of Sancerre exist: Terres Blanches (limestone), Caillottes (chalky limestone), Silex (flint). The result is several cuvees vinified separately each reflecting the different styles. This wine is sourced from one specially selected vineyard of Silex called Jeugny. Grapes from vines averaging 15 years of age were hand-picked and gently pressed, with fermentation in stainless steel tanks. The wine was made by Philippe Girard, Michel Girard's son. Normally Michel and Philippe would blend Silex into Sauvignon Blanc from other terroirs in Sancerre, but Philippe believed this cuvée had such a dazzling purity and finesse that he decided to bottle it solely as Silex.
VINIFICATION: Pneumatic pressing. After a must racking of 12 to 24 hours, the must is placed into a fermentation tank where it ferments at a temperature of 18°C. Ages on its lees in stainless steel vats for four months.
