VINEYARD: Careful selection of the estate's best (and oldest) castelão vines planted to clay/limestone soil.
FARMING: Organic, Sustainable
VINIFICATION: Manual harvesting in 15 kg boxes, total de-stemming, with 20% whole bunches from a 100-year-old vineyard and natural fermentation with indigenous yeasts for 10 days in vats of 1000 kg, finishing fermentation in neutral French oak barrels (500 and 225L). Aged 10 months in the same barrels where fermentation took place.
