VINEYARD: Vines were planted in 2000, 2009, and 2012 on limestone and Langa stone with an eastern exposure at 550m asl.
VINIFICATION: The grapes were hand-harvested in early September and placed into small plastic baskets. After being brought to the winery, the grapes were immediately pressed in whole-cluster, taking the skins off the must. The alcoholic fermentation for both grapes was kept at a low temperature. Part of the base was placed in medium-sized, not toasted barrels, while the remaining part stayed in steel tank. Once the alcoholic fermentation was complete, the wine remained on the lees with periodic bâtonnage. At the end of this period the wine aged on its lees for a minimum of 30 months before the disgorgement and dosage took place.
