VINEYARD: 50ha vineyard facing southeast towards the Thau Lagoon, with near sea-level elevation. Clay and limestone soils with the average age of the vines ranging from 15-20 years.

VINIFICATION: Evening mechanical harvest, and 100% destemmed. Pneumatic press and cold settled. Fermented in temperature controlled stainless for 10-15 days. Aged 3 months in stainless on fines lees with stirring. Fined and filtered before a micro-carbination method..
