VINIFICATION: Grapes are harvested at night to take advantage of the cooler temperatures and to prevent oxidation. The vinification process takes place in temperature controlled stainless steel tanks. The wine is aged on the lees for a minimum of 4 months. There is no malolactic, as to retain a good acidity that permits the full expression of Picpoul.
TASTING NOTES: Pale yellow with green hues. The bouquet is packed with citrus and white stone fruit and the palate has aromas and flavors of grapefruit and citrus with a lively freshness. Serve as an aperitif of paired with shellfish, sardines, ceviche, goat cheese or cured ham.
