FARMING: Biodynamic, Organic

VINIFICATION: 3 days on the skins and then pressed for a slow, low temperature fermentation (small amount of whole-cluster). The wine ages 6 months on the lees in a mix of concrete and stainless steel. Bottled unfiltered and unfined.
