VINEYARD: Grapes are sourced from two southeastern-facing vineyards; Campo dell'Oliveto and Campo dei Montagnoli. Soil is comprised of clay with fractured sandstone soil. Certified organic.
FARMING: Organic
VINIFICATION: The grapes are picked by hand and carefully selected directly in the vineyards. The grapes arrive in the cellar, transported in small cases, where they are pressed. Fermentation takes place in 40hl vats and steel tanks. It rests and is aged in 40hl oak casks for a minimum of 18months. After bottling without filtration, it rests in bottle for at least another 6 months.
