NOTES
VINEYARD: Terra Salata with southern exposure, 140 meters above sea level, sandy soil with a little clay and some stones.

FARMING: Organic

VINIFICATION:  The grapes are hand picked and are processed within a maximum of 2 hours, as all the vineyards are within a 350-meter radius of the winery. The de-stemmed grapes ferment in 750-liter amphorae. The yeast are indigenous. At the end of the fermentation the amphora is closed and the wine remains on the skins for 12 months. After racking in September of the following year, the wine is left to settle for about 60 days to deposit, then is transferred and bottled unfiltered.
