VINEYARD: Grown on shallow sedimentary clay soil. 250-450ft elevation.

FARMING: Sustainable

VINIFICATION: The grapes were picked by hand on October 19th and 20th and brought to the winery by horse. Once at the winery, the grapes were de-stemmed by hand, then placed into wooden fermenters (80% whole-cluster). The must was fermented on native yeasts, after which it was pressed by hand in a wooden basket press, bicycle-pumped into barrel, and underwent malolactic fermentation without inoculation. The wine was bottled with a gravity filler, corked by hand, and labels were manually applied with wax. The 1899 never touched dry ice, canned nitrogen, enzymes, stainless steel, forklifts, commercial yeast, electric pumps, or filters. Aged 20 months in 75% new French oak.
