VINEYARD: Soils of loam, clay, and limestone. In the vineyard formation of humus is encouraged as a basis of healthy soils. Natural composts and herbal remedies are used in the vineyard. The biodynamic calendar is followed for the maintenance of vine health.

VINIFICATION: The fermentation is natural in large wooden barrels. The wine undergoes natural MLF and remains in neutral oak for ten months. which softens the palate and adds a creamy texture. Bottled with minimal SO2 (less than 50mg/L, and unfiltered.

NOTES: This wine is named "Out" for being "outside the norm": the appellation system considered the wine unusual for Burgenland, so Judith pulled ‘out’ of it.
