PRODUCTION METHOD: The Fundy Gin is a love letter to the Bay of Fundy which the spirit is named for. The Bay of Fundy is a bay on the Atlantic coast of North America, located between the Canadian provinces of New Brunswick and Nova Scotia, with a small portion touching the U.S. state of Maine. It's famous for having the world's highest tides, with some areas experiencing a tidal range of up to 16 meters (52.5 ft).
The wondrous and unparalleled tides of Fundy are the engine which powers not only a constant and repetitious erosion mechanism but one which fuels, nurtures and supports one of the great natural ecosystems of the world. At least eight species of whales call the Bay of Fundy home, including the Minke, Humpback, Baleen, and the endangered Northern Right Whale.
Fundy Gin is crafted from a base of local corn spirit and aromatized with a short list of botanicals. Croatian Juniper, Angelica & Orris Root, Cardamom, Coriander, and dulse; a purple seaweed harvested right from the Bay. The gin has a very cooling aspect to it from the cardamom, with subtle notes of sea spray and salinity from the dulse. Excellent with tonic & sour orange, or stirred with dry vermouth in a martini.
