VINEYARD: Self-rooted vines planted in 1979 on Bellpine soil. Farming practices are minimal intervention with no irrigation, no pesticides. Dijon 115 clone. Crow Valley Vineyard is a cool growing site allowing fruit to fully develop for greater physiological ripening without high brix.

FARMING: Organic, Vegan

VINIFICATION: Hand-harvested grapes were de-stemmed and skin-macerated for 3 weeks with daily punchdowns. Fermented with wild yeast from the vineyard site (pied de cuvee) in netrual oak barrels. Aged 12 months before bottling
