NOTES
VINEYARD: 50+ year old vines planted on clay and pink granite soil. The winery owns 60ha of vineyards in Salnés Valley, with some of the vines being centuries old and all of them located within a maximum distance of 15 minutes from the winery.

FARMING:
Sustainable, Vegan

VINIFICATION: Following the manual harvest, the grapes are transported in 16 kg boxes to the winery, de-stemmed and crushed for an initial prefermentation maceration, then fermented with the pomace. Pump-overs are performed three times a day, and sagniée is carried out at the end of the fermentation in order to concentrate the dark berry flavors.
